Who needs a new dinner idea? Add this crockpot chicken with wine to your meal plan for a quick and


This was a winner: Crockpot Chicken with Wine, healthy, delicious, and super fast in the crockpot. It can be served with pasta or zoodles or another lower carb pasta option if you're watching your macros. I was a little nervous the kids wouldn't like the flavor, but they were surprisingly okay with it. 2 of the 3 picked out the tomatoes (I'm not quite sure they are actually Italian... maybe switched at birth?), but otherwise, everyone was happy!

The tomatoes and artichokes add a ton of flavor while the lemon juice adds a little zing. Super tasty sauce over my favorite, zoodles! The kids had the chicken mix with pasta on the side... they still aren't fans of anything touching ;) Wonder when this stage will end? So without further ado, here's what you'll need:

Ingredients:

1 lb of boneless chicken breast

1 14 oz can of diced tomatoes

1 14 oz can of artichokes, quartered and drained

1/2 cup of white cooking wine

1 Tbsp of lemon juice

1 clove of minced garlic

salt and pepper to taste

Cooked pasta or zucchini noodles for serving

Directions:

Season chicken with salt and pepper. Place in crockpot. Add the tomatoes, artichokes, wine, and lemon juice to crock pot and str. Cook on high 3-4 hours or low 6-8, or until chicken is cooked through. Serve over cooked pasta or zucchini noodles!
