Banana Oat Muffins

These are one of our fan faves - mini banana muffins with oats and a few mini chocolate chips thrown in. Using whole oats, whole wheat flour, mashed bananas, and smooth milled flaxseed really gives these mini muffins a fiber punch! A great home made classic perfect for after school snacks with some cut up fruit :) Enjoy and comment if you try them!

 
 

Banana Oat Muffins

Ingredients:

  • 2/3 cup packed brown sugar

  • 1/4 cup vegetable oil or apple sauce

  • 1 large egg

  • 1 large egg white

  • 3/4 cup mashed ripe banana (2 medium sized work great)

  • 1/3 cup fat free milk

  • 1 1/3 cups whole wheat flour

  • 2/3 cup whole oats

  • 1/4 cup smooth milled flax seed

  • 1 1/2 teaspoons baking powder

  • 1/4 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1/3 cup mini chocolate chips (optional)

Directions:

Preheat oven to 350 degrees. Spray mini muffin pan with cooking spray. Combine first 4 ingredients in a large bowl and beat with a mixer at medium speed until well blended. Add mashed bananas and milk and beat well.

In a separate bowl, combine flour, oats, flaxseed, baking powder, baking soda, and salt. Mix well. Add to banana mixture and mix until combined. Add chocolate chips and mix again.

Add mixture to prepared mini muffin pan. Bake at 350 for about 15 minutes or until toothpick inserted in the middle comes out clean. Cool on wire rack. Enjoy!

Makes about 3 dozen mini muffins. These can be frozen for later once cooled completely.
